Sauté medallions of fresh Pollack, sun dried tomato and wild garlic butter sauce. 

Saute medallions of fresh Ling,wild fennel, tomato dice and shallot sauce.

Venison and red wine casserole.

Pan fried chicken with panchetta, shallot, thyme, shitake and Riesling jus.
